Tonight's dinner....
Mock Ranch Dressing
1 Tbsp. Olive Oil
1 Tbsp. Mayo (I use Veganaise)
1 tsp. Mustard
2 tsp. vinegar (red or white wine)
1 tsp. each dried Chives and dried parsley
1/2 tsp. dried Dill
Mix all ingredients together. Enough dressing for a salad serving four.
I tossed the dressing on spinach leaves to accompany Old Bay shrimp. The creamy dressing went well with the spicy Old Bay seasoning.
