My weekly treat...

I make this on Friday nights to celebrate ending another work and school week at home and to toast my good fortune that I have a roof over my head, food on my table, yarn to knit with, an adorable dog to cuddle and a daughter who daughter who makes me laugh.

Southern Mojito

2 oz. Pineapple juice, 2 oz seltzer and 1-2 Tbsp Bourbon (or more depending on your tastes) in a high ball glass. Stir. Add 1 mint sprig (fresh or dried) and ice. Then sip and relax.
