Meatless Meatballs and Spaghetti

2 Tbsp. Flax Egg ( to make the flax egg mix 1/3 C. water plus 3 Tbsp. ground Flaxseed and let stand for 10 minutes)

I 14 oz. can Lentils

1/3 C. Oat flour (I just grind up oats)

1/2 Tbsp. dried minced onion

1 /2 Tbsp. dried minced garlic

1 Tbsp. Dried Parsley

1 15 oz. can tomato sauce

1 box spaghetti

Grated parmesan cheese for topping

Preheat oven to 350. Drain the lentils and puree in a blender. Scrape the lentil puree int a bowl and add the onion, garlic, oat flour, and flax egg. Stir well. Using your hands form the mixture into 7-8 meatballs. I recommend oiling your hands so the mixture doesn’t stick. Place on a parchment paper-lined cookie sheet and bake for 15 minutes. When done place in a pan with the tomato sauce, bring to a boil and then simmer for 10 minutes. Cook the pasta according to the box. For serving, place pasta in a bowl, cover with sauce, 4 meatballs, and top with parmesan cheese. Makes 3 servings.
