Easy Greek Salad

1 Kirby cucumber

1 medium bell pepper (red, orange or yellow)

1 small red onion

2 avocados

1 Romaine lettuce heart

1 15oz. can chickpeas

1/2 lemon cut it wedges

1 Tbsp. dried parsley

4 Tbsp. crumbled feta (optional)

2 C. pita chips

1 C. hummus (any flavor you like)

Cut the Kirby, the avocados, Romain, and red onion and pepper into chunks. Line each on a platter with the chickpeas. Sprinkle with the parsley. Serve with lemon wedges and the feta on the side. Place the pita chips and the hummus in their own bowls and place them on the table with the salad platter. Serves 4.
