Cowboy Nachos

1/2 a red pepper

1/2 a red onion

1 can Black beans

1 tsp. Cumin

1 tsp. Chili powder

1 tsp. Garlic powder

Juice of 1/2 a lime

I bag Tortilla chips (preferable unsalted)

1 C. grated cheddar or Mexican blend cheese

Sour cream and/or chopped parsley for serving

Preheat the oven to 400. Dice the pepper and onions and place in a bowl. Add the black beans, spices, and lime juice. Mix thoroughly. Line a rimmed cookie sheet with parchment paper. Place a layer of tortilla chips on top. Spread the bean mixture over the chips. Sprinkle on the cheese in an even layer. Bake for 5 minutes or until all the cheese is melted. Makes 4 servings. Serve with sour cream and/or chopped parsley as toppings.
