Sweet Pasta

Vidalia Onion Pasta

1 box short pasta (such as rotini, penne, ziti, etc)

1 Vidalia onion

2 cloves garlic

2 Tbsp. olive oil

2 Tbsp. Shaklee Instant Soy Protein Mix

3/4 C grated Romano cheese

salt, pepper and red chili flakes to taste

Cook the pasta according to the box. Heat the oli oil ins a skillet. Chop the onion into rings and then quarters. Mince thee garlic. Add to the skillet and cook on medium for 5 minutes until the onion is soft and lightly browned. and reduce heat to low Drain the pasta and reserve 1/2 C pasta water. The the water add the soy protein mix and 1/4 C cheese. Whisk together. Add the water mixtures to the skillet and let cook for 3-5 minutes until the liquid is reduced in half. Add the pasta and stir thoroughly to coat. Season to taste. Serve immediately. Makes 3 servings.
