2 C. frozen lima beans, defrosted

1 medium sweet onion

1 red pepper

2 C. frozen corn, defrosted

2 vegetarian/vegan Italian sausage links

1 1/2-2 C. chopped Okra (I cut each Okra in 4 pieces)

2-3 Tbsp. Olive oil

A pinch of red pepper flakes

Salt and pepper to taste

Cook the sausage according to the package using 1/2 Tbsp. of oil in the pan. Cut 1/2 the onion (save the other half for another meal) and the red pepper into a medium dice. Cut each Okra into 4 pieces. Put all the veggies in the same bowl. Once the sausage is cooked, remove from the pan. Add the rest of the oil. Let heat for 1 minute. Then add all the vegetables and seasonings. Saute the veggies for 5 minutes. in the meantime slice the sausages in half the long way and then in 1/2” pieces. Add to the pan and saute another 5 minutes. Serve immediately. Makes 4 servings.

I made this recipe because my daughter said Okra was in season and as a way to honor my southern roots (my mom is from Memphis, TN). My sister and I pretty much visited our Grandparents there every year until I was 17 because by then they had both past. I still have family there and still visit, although not every year anymore. My daughter and I went with my mom for a visit in 2019 and Sylvie got a real understanding of her southern roots and her family history. I even learned some history too.
