Vegan Cobb Salad

Salad:

4-5 Romain Lettuce leaves, chopped

2 Tbsp. chopped red onion

3 Tbsp. Chopped bell pepper (any color)

1 small Avocado, diced

1/2 C. Roasted chickpeas

1/2 C. frozen corn, thawed

4 pieces veggie bacon cooked and crumbled

Mix all ingredients together. Toss in dressing (recipe below).

Dressing:

1/4 C. Lemon Juice

2 Tbsp. Rice Wine vinegar (you can also use white wine vinegar or apple cider vinegar)

1/2 Tbsp. Dijon mustard

3 tsp. dried minced garlic

1/4 C. Olive oil

Mix all ingredients together in a small bowl or small glass jar. Pour over salad and toss to coat.
