Leftover bread?

What do I do with leftover bread? depending on the type I make bread pudding or baked french toast. This time it was bread pudding

Breakfast Bread Pudding

1/2 a loaf of Proscuitto bread (aka Lard Bread) cut into cubes

2 eggs

1 C. Plant or nut-based milk

Black Pepper to taste

1 C. shredded cheddar cheese (I used Daiya cheddar style shreds)

1 C. Frozen chopped spinach, slightly thawed.

Preheat oven to 350. Grease a loaf pan. In a bowl beat the eggs and milk and pepper. Add in the rest of the ingredients and stir until the bread is coated. Place bread mixture into loaf pan and allow to sit for 15 minutes. Bake for 35-45 minutes until the bread is toasty. Serve warm. Can be frozen for up to 1 month and reheated (microwave on power 7 for 2 minutes per serving).
