Veggie Burgers

“Look Ma, no beans…”

1 C. grated Vidalia Onion

1 C. grated carrot (don’t peel)

1/2 C. grated zucchini (don’t peel)

2 cloves garlic minced (I used a garlic press)

1/4 C. soy sauce

1 C. oats, ground

1/2 C. ground Pepitas (or 1/2 C. ground sunflower seeds)

Salt and pepper to taste

Preheat oven to 350. Saute the veggies and garlic in a little oil or microwave on high for 3 minutes. Scrape veggies into a bowl and add the other ingredients. Mix well. PLace bowl in the freezer for 10 minutes. Form into 4 medium or 3 large patties. Bake for 20 minutes, flipping after 10 minutes. Serve warm or cool completely and freeze for later (defrost first).

Serving suggestion on toasted buns with cheese and avocado, or on grilled portablllo mushrooms with cheese and tomotoe.
