Mushroom Soup

`1/2 Portobello mushroom

8 oz. homemade vegetable broth*

3 Tbsp. Shaklee Instant Protein Soy Mix

1 tsp. chopped chive or 1/2 tsp. dried chive

Pepper to taste

Nuke the mushroom on high for 1 minute and then dice. Place the broth, (heated up), protein powder, and mushroom in a blender. Add the chives and blend on high for 2 minutes. Add pepper to taste. Serve in a mug. Makes 1 servinng. * I place leftover veggie scraps that I froze in my slower cooker with 10 cups of water. I cook it on low overnight. This makes 9 cups of broth which I freeze in 1 cup servings.
